One of my favorite muffin recipes

Carrot & Apple muffins

1 1/2 cups flour
3/4 cup ground flax seed
3/4 cup oat bran
1 cup honey (3/4 cup if you want less sweet)
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
3/4 cup skim milk
2 eggs beaten
1 tsp vanilla extract
2 Tbsp vegetable oil
2 cups shredded carrots
2 apples, peeled, shredded
1/2 cup raisins (optional)
1/2 walnuts (optional - I usually don't put them in)


1. Preheat oven to 350 degrees. Grease muffin pan (or use liners).
2. In a large bowl, mix together flour, flax seed, oat bran, baking soda, baking powder, salt, cinnamon & nutmeg. Add the milk, eggs, vanilla and oil; mix until just blended. Stir in the carrots, apples, raisins and nuts. Fill muffin cups 2/3 full with batter.
3. Bake (350) for 15-20 mins.
