Gnocchi

One of favorite meals growing up is gnocchi. It's a potato-based pasta that takes some time to make, but is absolutely delicious. So for one FHE, we decided to make some!

First, you boil some potatoes, then skin them. You put them through a ricer on top of a "volcano" of flour, eggs and vegetable/canola oil and knead the dough until it's not sticky.

At this point, it's still sticky and needs some more flour.


Lindsay decides to get in on the fun with the dough! Looks like it has enough flour now.

After the dough is mixed, you take a piece and roll it into a snake. Then you cut off small pieces, roll them off a fork and cook the gnocchi like normal pasta, in boiling water.

A yummy meal, enjoyed by all!

This was something I would order almost every time we went out to eat in Slovenia, because it is SO delicious! It was really fun to make and even better that Spence taught me tricks like how to roll it off the fork, so that we enjoy the little details that make it that much more scrumtious :)

This was actually and truly the best gnocchi I ever had.
Are there any other secrets we need to know?

Nope, that's all the ingredients. If anyone wants the proportions, let me know.

Be warned, it took us 3 hours from start to finish, not including cooking time (which only takes 5-10 min.)

yea it was pretty funny when Spence got home about 7 and I was like, 'I was thinking we could do the gnocchi for dinner...' he's like, 'if we wanted to eat at about 10...' I didnt realize it took so long to make so I think we whipped up some rice a roni or someting then started our creation... it's really fun tho and some of the time is of course letting the potatos boil, etc.
